1. Mix the dry ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. This helps ensure even rising and prevents any bitter baking soda spots.
2. Combine the wet ingredients
In a separate bowl, whisk together the eggs, buttermilk, and vanilla extract. Add the melted (but slightly cooled) butter and mix until smooth.
3. Make the batter
Pour the wet mixture into the dry ingredients and stir gently with a whisk or spoon. Don’t overmix—your batter should be slightly lumpy. Overmixing makes pancakes tough instead of fluffy.
4. Cook the pancakes
Heat a nonstick skillet or griddle over medium heat. Add a small pat of butter and let it melt. Pour about ¼ cup of batter into the pan for each pancake. Let it spread naturally into a circle.
When bubbles form on the surface and the edges start to look set (about 2 minutes), flip the pancake and cook the other side for 1–2 more minutes until golden brown.
